Air-fried Chicken Tender
- thin cut chicken breast cut into pieces
- set up three shallow bowls/containers
- coconut flour seasoned with garlic powder, onion powder, Italian seasoning, pepper, and some kosher salt
- heavy cream
- ground pork rinds (place pork rinds in a blender and blend till like bread crumb consistency)
- season chicken with a little pepper and salt and garlic powder
- dip chicken in coconut flour then heavy cream then pork rinds
- place in air fryer for set time (I cooked them twice when it was done I opened and flipped them over and cooked for 1/2 the time)
- eat and enjoy

This is just ME & what i LOVE to do. i love to take pictures of food!! i know it is weird. Meatball Cheese Bake (keto)
Meatball Cheese Bake
Ingredients
- Meatball see previous post
- sugar free sauce I like to use Ragu (or make homemade)
- Mozzarella cheese
How to make
- pre heat oven to 350 degrees
- place meatballs into an oven safe dish
- cover with sauce
- top with mozzarella cheese
- place in oven for 20 min till cheese is melted and slightly browned
Eat just like that or enjoy over Keto noodles (or non keto noodles) or enjoy on Keto bread, Keto Bagel, even in a cheese crisp taco.

- place pepperonis in a single layer on parchment paper on a cookie sheet
- bake about 5-10 mins they will look soft but once cooled they harden up
- let cool eat right away or place in a airtight bag/container and enjoy later

Cheese Crisps/Taco Shell (keto)
So many uses for these taco shells, tostadas, Chips
Cheese Crisps:
Ingredients
- 2-4 cups of cheese of your choice
- seasons of your choice
How to:
-preheat oven to 375°
-in a medium bowl place cheese of your choice. I like mixing a couple up for different flavors choose your favorites
-sprinkle garlic powder, oregano or Italian seasoning, pepper, kosher salt (very little or to your liking remember cheese is salty already)
-mix together
-place a mound of cheese on a cookie sheet lined with parchment paper (make as big or as little as you wish your portions to be)
-bake 5-10 mins or till golden brown on the edges
-they will be soft at first let cool and they will harden. If you want to shape them into tacos shells form them while still warm. You can hang them over a spatula to help shape them.
Eat once cooled or save for snacks.

- ground pork
- ground beef
- ground Italian sausage
- 2 eggs beaten
- 2 tbls of heavy cream
- 1 cup of ground pork rinds (just put them in a blender and blend till it's like bread crumbs)
- garlic
- salt
- pepper
- Italian seasons
- 3/4 cup cheese of your choice
How to
- mix everything together and form into small balls (about ping pong size or to the size of your liking)
- pre-heat oven to 375 degrees
- place meatballs in a hot pan and roll around till browned all the way around.
- place browned meatballs on a lined baking sheet and place in oven for 15-20 mins till cooked all the way thru
Eat just like that or add to you favorite sauce. Great for a snack or see my post on a Meatball cheese bake.
Simple Steak & Green Beans (keto)
Easy Cooking 20 min start to finish whole meal!
Green Beans
made in an instant pot
- place 2 cups of water on bottom of pot
- place steam basket into instant pot
- place fresh green beans (washed and trimmed) into basket
- sprinkle salt, pepper to taste
- 1-2 tbls of minced garlic and 2 table of butter on top
- Close lid with pressure
- set for 2 mins, mid heat
- quick release once finished
Steak
made in the oven
- Preheat oven to 450 degrees
- New York Strip season with salt pepper garlic & more garlic
- mix butter with garlic and Italian seasoning (I pre-make this and freeze)
- line a baking sheet with foil
- place steak/s on backing sheet and place a dollop of butter on top
- bake for 15 mins
- flip over and bake for additional 5 mins (comes out med.)
- let steak rest for 2-5 mins so you don't lose all the yummy juices
Once finished eat and enjoy! I like Sparking Ice as treat.

Grilled Chicken w/ Avocado Salsa (keto)
I found this online from Gimme Delicious!! The only thing I would I add a little heat by adding a jalapeƱo to it. Other than that I wouldn't change it at all. The topping would be good on anything like eggs or just by it's self.
Low Carb Bagels (keto)
Who doesn't love bagels? I had to find something as close as I could. These are rather yummy if you ask me and will do the job!! Not that hard to make!
1 1/2 cup Shredded Mozzarella Cheese
2 oz Cream Cheese
1 large egg
1 1/4 cup almond flour
1 tbsp baking powder
1 tbsp whole psyllium husk
everything bagel seasoning
- put the cheese in a microwave safe bowl and melt in mice wave 20 secs at a time. sir and repeat till fully melted.
- scrape into a food processor and add egg process till smooth
- add remaining ingredients and process till it in dough form
- place on plastic wrap and put in freezer
- preheat oven to 400 degrees
- line baking sheet with parchment paper
- once the oven is ready take dough out and roll into long snake like and form into a bagel. put a little oil on your hands as the dough is very sticky. make sure you press the ends together so it seals.
- I sprinkle the everything bagel seasoning on top and then flip it over and pick up the seasoning that didn't stick so it's on both sides
-bake for about 12 mins or still golden brown
-let them cool on the pan
-eat once cooled or store in a air tight bag/container in the fridge
perfect for a sandwich or just with some cream cheese

Salad with Pepperoni Chips & Chicken (keto)
Ingredients
Roman lettuce
4 olives
4 cherry tomatoes
4 pepperoni chips
1/4 avocado
1 Parmesan/Mozzarella crisp
1 Mexican cheese mix crisp
1 chicken tender
2 TBLS of Italian dressing
2 challenges and life style change!!
Well lets see I have tried Orange Theory and it was okay but not for me it hurt my knees and I hate the treadmill and you have to do that for about 1/2 the class so I couldn’t do it. Then last year I decided to try a 6 week challenge with RAW fitness. Love the workouts they were hard but loved them something different all the time. The doer was extremely hard but i did for most of the 6 weeks besides when we went to Disneyland cause who can go to Disneyland and not eat!? Right? Well I didn’t lose the 20 lbs that I should have but I did lose some and I got back into working out and eating better. I worked out and cooked and ate better but of course life happens and I feel back into bad habits. I stoped going to clases and gained weight back again. So sad. Well I have been going
Back to RAW and I have started Keto. So I have been making foods and people keep asking how I made it so I figure I will get back on here and start posting again. I will do my best to post and keep up on here. And maybe show my progress. Actually that might help me I will show my 8 week progress from Orange Theory and my RAW 6 week challenge progress. Along with my progress as I start this journey and life style change. My family will be eating along with me but they aren’t giving up everything that me and hubby are so I will make some meals two ways and post them both. I’m determined to get back to a normal weight for me and I’m gonna do it with life style change of eating.

Loco Moco
So I made loco moco for dinner last night it was so easy and fast to make. And my babe loved it.
First I made white rice, while that was cooking I got the ground beef and seasoned it with garlic, salt, pepper, BBQ sauce, and a little coke. Mixed well and formed hamburger patties. When forming you patties make the outside a little thicker than the inside cause when you cook them the center tends to get bigger. You can cook the patties on stove or grill. I grilled mine. While they were on the grill I made brown gravy (today I used the one you just add water. I added garlic to it as well for taste) and I fried up the eggs. Went out and grabbed the patties. Plated up rice on the plate, placed the pattie on top then the eggs. And topped it off with the gravy!

No Bake Corn Chip & Peanut Butter Toffee
Yet an other Gluten Free Goody! and super easy to make and eat :D what you need:
1 package (9.75 to 10.5 ounces) Fritos corn chips
1 cup Karo light corn syrup
1 cup sugar
1 cup creamy peanut butter
Spread Fritos on a greased 15x10 baking pan (i used wax paper not a good idea at all!) In a saucepan over medium heat, bring corn syrup and sugar to a boil, stirring frequently to help dissolve the sugar boil for approx. 1 minute. turn heat to low stir in peanut butter until smooth. Pour over Fritos. it's really sticky so be careful but it is really good! taste almost like a payday candy bar.

I wanted to find a candy that i can make in the crock pot and i came across one from Trisha Yearwood's cook book (i love country music and her music at that. so i had to try it) and this too is Gluten Free! here is what you need:

4 oz (4 squares) German's sweet chocolate
1 12-oz package semisweet chocolate chips (about 2 cups)
2½ lbs white almond bark
I had my daughter do all of step 1 and then she lined the cupcake tray we did the small ones not regular size liners and were able to make 101 (she counted them all) i also used 1lb almond bark and 1lb white chocolate chips.

Old Fashion Potato Candy
So one of my friends that i met in Hawaii posted something about potato candy something i have never heard of. so i decided to find out what it was. I found a recipe and decided to make it. The best part is that Potato candy is Gluten Free :D I found how to make it on The Merry Gourmet.
here is what you need and how to make it:
1 cup mashed potatoes, room temperature or cold
1/2 cup (1 stick) unsalted butter, room temperature
1 teaspoon vanilla extract
3 pounds confectioners sugar
1/2 cup smooth peanut butter, divided

Okay so in a large mixing bowl, stir together mashed potatoes, butter, and vanilla. Add confectioners sugar, one pound at a time, and stir together well. Once the dough is thoroughly mixed, divide it into two halves. On a sheet of wax paper, and using your hands, flatten out the dough into rectangle, roughly 12-14 inches long. (my daughter loved doing this part!) Spread 1/4 cup of peanut butter onto one half of the dough (i think it needed more peanut butter my self after i tasted it but the little one said she liked it as is). Carefully roll into a log and wrap well in wax paper. Repeat with other half of dough. Chill the logs for at least 2 hours before slicing. Once chilled, slice into 1/4-inch pieces and serve.
Make ahead: Store prepared potato candy, layered between sheets of wax paper, in the refrigerator in a covered container for up to 2 weeks.

Chocolate Covered Potato Chips
Made Chocolate covered potato chips today! The sweet and salty is so good. and super easy. all you need is Ruffles and a bag of Nestle semi-sweet chocolate chips, use a double boiler to melt the chocolate dip chips in half way let cool completely then enjoy or store in a air tight container. My 6 year old helped with these she love them!

Gluten Free
So I can't seem to keep food down. it's been about 5-6 months so i finally went to the doctor to see what's going on. and i sit in the waiting room for 1.5 hours then finally go back and sit for another 15 mins. dr. comes in and says well are you pregnant? "NO" well then he just looks at me so i starting telling him everything i'm feeling won't go into detail here but this last about 5 mins he gets up and says okay pee in the cup and we will do blood work. and i will see you back in 7-10 days. and walks out really? are you serious? just walkout and not say anything? oh well i do what he says and i was supposed to go in today for the results and what i get call this morning while at work to tell me my appointment has been canceled and i can come in on fri.
i have been cutting out gluten out of my diet and able to keep food down and not feel gross so i am thinking that may have something to do with it. if that is the case i will be making this a gluten free blog with foods that i can eat and my girls will like as well. and that will fit into our busy lives. so look for more to come. Have a wonderful week everyone!! Smile cause you can! remember it could be worse. right?

Twisted Root Burger
Went to Dallas and had to go and try out Twisted Root Burger that we saw on Diners, Drive-ins & Dives. All I can say is WOW the best burger I have ever had. and the homemade root beer was awesome. I don't even like root beer and I had 4 cups of the pistachio root beer.
